A Bright Chickpea Skillet for Busy Evenings

A Bright Chickpea Skillet for Busy Evenings

Some evenings call for a dinner that starts with a can opener and ends with a piece of bread dragged through the pan. This chickpea skillet gets its brightness from lemon and its depth from a few minutes of cooking onion and spices before the beans go in.

Build the flavor first

Warm 2 tablespoons olive oil in a large skillet over medium heat. Add 1 finely chopped small yellow onion and cook until soft, about 5 minutes, then stir in 3 minced garlic cloves, 1 teaspoon ground cumin, and ½ teaspoon paprika for about 30 seconds.

Tip in two 15-ounce cans of drained chickpeas and 1 cup vegetable broth. Season with salt and black pepper, bring the broth to a gentle simmer, and cook for 8 to 10 minutes. Press a few chickpeas against the side of the skillet with a spoon; they’ll thicken the broth without needing a separate sauce.

Finish with lemon and greens

Stir in 5 ounces baby spinach a handful at a time, letting each addition wilt before adding more. Take the skillet off the heat and add the zest and juice of 1 lemon. Taste before adding more salt—the broth and canned chickpeas can vary.

For a richer finish, crumble a little feta over the top; for a dairy-free bowl, use chopped parsley instead. Serve with toasted pita, crusty bread, or rice to catch the lemony broth. If the skillet sits while you set the table, loosen it with a splash of water.

Make it your weeknight staple

No spinach in the crisper? Chopped kale works, though it needs a few extra minutes to soften. A pinch of red pepper flakes can join the garlic if you like a little heat, but the recipe is just as good without it.

The useful rhythm here is simple: soften the onion, wake up the spices, then give the chickpeas time to drink in the broth. Keep that order in mind and the skillet is easy to adapt to whatever greens or beans you have on hand.
